Homemade Noodles

When I think of the ultimate comfort food, I think about these homemade noodles.  They are incredibly easy and so delicious!  And you know you just can’t buy noodles like these from the store.
They really don’t take much effort, and they’re very inexpensive to make.  They are perfect in homemade  Chicken Noodle Soup, or as a side dish to go with Swedish Meatballs and Gravy!  Mmmm…I’m getting hungry just thinking about them!
You probably already have all of the ingredients in your pantry!  (Except for the eggs and milk, those should be in your fridge!)  Go gather up the ingredients.  You gotta try these!  You’ll wonder how you ever lived without them!

Here’s what you’ll need:

2 c. flour
1 t. salt
2 eggs, beaten
3 T. milk (give or take)
Put salt and flour in a bowl and stir together.  In a separate bowl, beat eggs and milk with a fork.  Pour into the flour/salt mixture to make a stiff dough. (Add more milk if needed just so the dough is not dry and crumbly, but be careful not to add too much or it will become sticky.) Put the dough on a floured counter top and knead a about 10 times.  Form it into a ball and cover with a clean, damp towel and let it sit for about 30 minutes. (This is important because the dough needs to “relax” so it will be easier to roll out.)
Sprinkle the counter top with a little flour and roll the dough out to about ¼ inch thick (or less.)  Slice it into thin strips with a pizza cutter.

Now lay the noodle strips onto a clean kitchen towel.  Allow to dry about 2 hours (or they can be used right away if you need to.) To cook, sprinkle the noodles into boiling soup or broth, a few at a time, so they don’t stick together.  Boil about 8-10 minutes or until done.
These are the perfect comfort food!  You’re gonna love them!

I've got three roosters in the stockpot and was thinking of doing the same and then adding them for soup:)
