This past summer I managed to buy 18 Butternut squash at $0.50 each.

How to Break Down a Butternut Squash

Step 1

Cut off both ends and scoop the seeds out of the opening in the wide end with a spoon. I don't make such a big cut because I hate to waste a bite! I save the seeds for gardening/sharing and have also found the seeds to be quite tasty, too.

Step 2

Wearing an apron, hold the squash against your chest and remove the skin with a peeler, working toward you. Sometimes I also use a paring knife for tough spots.


Step 3

Cut the squash where the body becomes bulbous; halve each section lengthwise and dice. The beef chili used smaller pieces
