Sweet n' Sour Chicken

 
Serves 6
Prep Time -10 min
Cook Time -30 min
Total Time -40 min
Ingredients
  1. 2 lbs. chicken breast, tenderloin, or thighs
  2. 3/4 c. arrowroot starch 
  3. 2 eggs
  4. 1/4 c. coconut oil 
Sauce
  1. 1/2 honey or unrefined sugar 
  2. 4 TBS. ketchup 
  3. 1/2 c. apple cider vinegar 
  4. 1 TBS. soy sauce alternative 
  5. 1 tsp. garlic powder
Instructions
  1. Dice chicken into 1-inch pieces.
  2. Place the chicken in a bowl & coat with arrowroot starch.
  3. Whisk eggs in another bowl. Dip coated chicken in eggs.
  4. Heat coconut oil in a pan over medium-high heat.
  5. Fry chicken until golden brown.
  6. In separate bowl, mix sauce ingredients thoroughly.
  7. Place chicken in baking dish and pour sauce over it.
  8. Bake at 325 degrees for 30 minutes, stirring every 10 minutes.
  9. Serve with a side of rice.
