SKILLET CHEESY BISCUITS

SKILLET CHEESY BISCUITS

Servings: 8-10 2 1/2 inch biscuits

INGREDIENTS:

1 C. Cornmeal
1 C. Flour
1 T. Baking powder
Pinch of Salt
1/2 C. Heavy Cream (or 1/2 and !/2)
2 Eggs
4 T. Butter (melted)
1/2 tsp. dried onion flakes
1/2 tsp. Garlic powder
1 C. Grated Smoked Cheese (Divided)

DIRECTIONS:

Mix the dry ingredients until incorporated. Beat the eggs with the cream, butter, fold in 1/2 of the grated cheese. Add the beaten egg mixture to the cornmeal mixture stir until incorporated. Add more cream by Tablespoon if needed for a less firm dough if needed. Drop batter using a large spoon into a well greased 10-12 inch Cast Iron Skillet. Bake at 450 degrees 12-15 minutes or until nicely browned. Sprinkle the remaining shredded smoked cheese over each biscuit. Serve hot with Butter if desired.
